We absolutely all love Vacherin Mont-d’Or and so it was the logical consequence that one day we will use this beautiful crafted product to create a fondue style dumpling.

Pau and Arnaud went to Jura to meet with Hauser one of the awesome Vacherin producers and learnt all the hard and humble work that goes into this product, which only motivated us more to do right to this ingredient. They even discovered how the little wooden boxes are cut and then branded.

On this image you see one of the cheesemakers mixing the curd with his hands in one of this huuuge pots. (it is super physical!)

We pair Vacherin Mont-d’Or AOP with crushed new potatoes and pickled ghurkins for a perfect marriage of flavours.

When thinking about new products we always sit together with the team and think of what you DUMPLING ADDICT CLUB MEMBERS could like. We had a lot of request for another desert dumpling (next to the beautiful CHOCOLATE GANACE and mimi's APPLECRUMBLE. If you haven't tried them yet, we can strongly advise you to do it ASAP ;)

Fleur de sel and caramel. We are admittedly not the first ones to come up with this pairing, but it just works so incredibly well. Salty crystals cutting through the sweetness of the rich caramel toffee and a delicate crumble for additional texture. A perfect ending to a dumpling feast.
